Sluttishly Sweet: Honey Plum Ice Cream

I found some gorgeous damsons at my local farmers' market this weekend and then had to work out what to do with them. I settled on this recipe because for one, it's delicious, and also you don't have to bother stoning the damsons, which is great as they're a bit small and fiddly.

Ideally you'll need an ice cream machine, but you could go low-tech and make it by hand. And you don't have to use damsons. Although they are delicious, any old plums will do.

Honey Plum Ice Cream


You'll need:
  • 150ml double cream
  • 50ml milk
  • 25g honey
  • 3 medium egg yolks
  • 300g plums (stones in) - I used damsons
  • 2tbsp water
Make it!
  • Warm the cream and milk together in a saucepan.
  • Whisk together the honey and egg yolks.
  • Pour the warm cream mixture onto the egg yolks and stir (gently so no bubbles form).
  • Put the mixture into clean saucepan and heat it gently until it thickens. Don't let it boil or you'll get scrambled eggs!
  • Sieve into a bowl and leave to cool.
  • Meanwhile, pick through the plums and discard any leaves or damaged fruit.
  • Place them in a saucepan with the water.
  • Warm them over a medium heat and let bubble for around 15 minutes, until all the fruits have softened and popped.
  • Rub the fruit through a sieve and discard the stones.
  • Chill the plum puree and honey custard in the fridge for a couple of hours.
  • Mix the two together and churn in an ice cream machine until frozen.
